On my Lumia 640 with Win 10.0.10586.107 double tap to wake does work. Thus this feature was not removed from Win10 but seems to not be available on certain phones.
Still using and loving my old HTC 8X running Win 8.10.14219.341 and missing nothing (not using phone cameras). With the latest little update even the sporadic reboots are gone.

The Image backup known from Win7 is available in Win8 and Win8.1 too. It is only difficult to find: A link...
